Recipe | Raw Coconut Brownies

This is my recipe for a batch of chocolatey heaven, raw coconut and chocolate brownies. The recipe is very similar to my ‘energy balls’ recipe, inspired by the beautiful Deliciously Ella. If you’ve read my ‘New Years Resolutions’ post you’ll know that in transition to a plant-based diet, giving up chocolate was one of my weaknesses.   • 2 cups chopped pitted dates
  • 1 1/2 cups almonds & pecans
  • 3 tbsp cacao powder
  • 1  tsp vanilla extract
  • 2 tsp coconut sugar
  • 2 tsp chia seeds
  • 1/4 cup desiccated coconut plus extra to garnish
  • 2 tbsp coconut oil
  • ¼ cup maple syrup


  • Nutri-Bullet or food processor
  • Baking parchment


  • Blend the nuts to form a light flour before adding the cacao powder, chia seeds, coconut sugar and desiccated coconut, blend again
  • Add vanilla extract, coconut oil, dates and maple syrup and blend again. If the mixture is too thick, add a little water
  • Spread the mixture evenly into a shallow, lined baking tray before sprinkling extra desiccated coconut on
  • Placing in the freezer to set for an hour
  • Lift the brownie and parchment out of the tray and cut into portions
  • Box it up and store in the fridge and you’re good to go!
